The Ledet book is amazing! But unfortunately i must say that it is outdated in terms of using it as a guidance to make reeds. Non the less it is the best resource for reference into the 'real' old school reed styles available today. You will be amazed by the pictures!
Nowadays it is almost impossible to find an oboist who doesnt 'mix and match'. Even the American style players today, so protective of their Tabuteau tradition in the past, makes very different alterations altogether amongst themselves, which is obviously necessary to fit one's personal preferences.
Other than the general description that d-oboe mentioned, staples also play a big part in the production of different reed styles. Dutch staples are manufactured for the Dutch players, etc. But the scrape remains the obvious influence into how the vibrations are made. Hope this helped!
