Hello Sage,
The standard trill fingering for B-flat to A-flat would be to play A-flat, then trilling your l.h. middle finger. It is better in tune if you have a full-conservatory system oboe, with the plateau keys.
On the French oboe the standard fingering for the middle C would be x 0 0 | 0 0 0. One can experiment with putting more fingers down on the r.h., but that would come with a slightly different intonation. I still believe the middle C on the Viennese oboe (fingered 0 x 0 | x x 0) sounds much better.
