One of my favourite solos is from Khachaturian's Adagio from Phrygia (I think that's the title) mainly because it was the solo I played my first year in youth orchestra. (I completely botched it in the performance but that's not important!)
Others include Beethoven sym.#3 mvt. 2
Prelude de L'apres midi d'une faune - Debussy. There is beeeeautiful interchange between flute and oboe here.
I'm sure there are others, but really, to me, the most interesting part of orchestral playing is the combinations of instruments together, not so much the solo passages (they are so short!)
