Mr. Hubbard's description of "Mack the knife's" "Meat axe", reminds me of the knife that Mr. Still went to, which was a "Biopsy" knife, which was about twice as big as a regular, scraping knife. I never asked him why, but I believe it was because it would not "chatter" nearly as much as a smaller knife and might possibly hold an edge longer, being made of surgical steel. Interestingly, he also had the largest cutting block I'd ever seen. It was between 3-4" wide and about the same amount, high. I would think that a reed wouldn't dare to move, while cutting off it's tip on that block! Regards.
