Mike, you got it right on the nose, hit the nail right on the head!
I have long wanted to do that much knife work.... I don't know how people like you manage to fit all those projects in time!
I really like my Pisoni beveled knife quite a lot, but I had to grind it with a standard grinding wheel to hollow-out both the "flat" and beveled sides. Today, I only need to lay the bevel and the flat sides on a stone (flat, no angle) and rub it on the stone to get it razor sharp. But my Graf folding remains the best for reeds because the extra bevel helps prevent it from snagging: the "hollow-bevel" of my Pisoni is much thinner at the edge and so tends to snag.
You're completely right about many stones. GoodWind: your (extra?)fine diamond stone is excellent for near-finishing. It will ready a second bevel and/or prepare a face (flat side or bevel) for polishing. You will find that this stone alone will give a knive that pulls off the cane very well, but it will not give a smooth scrape. Perhaps this will be satisfactory for you, but I do suggest either a water or ceramic stone for polishing (fine honing).
