Knife: Graf folding... you will NOT regret it.

Stones:
* india fine (as an edge stabilizer)
* Ceramic (no water, no nothing) 4000 and 8000 grits for daily honing.

Diamond: excellent in-between the above.

The Graf knives are best sharpened without burrs, but rather by adding what I call a "2nd bevel" as per my demos and booklet:
