Fully agree with Alphons.

I'll add that bad cane can taste like popsicle sticks or like grass. The latter is cane that is either too young or has a waxy consistency that just won't vibrate (harsh crow) for more than a few seconds. The former is ultra-soft cane that probably lost its "living" qualities. Good cane tastes like cane: it has a neutral but distinct taste.

Unfortunately, these observations came from hundreds of scraped reeds. I don't know how to use this to predict good/bad cane.
