If you are running to your sharpening stones when your knife ceases to work properly, then yes, I can see why you are creating a curve in your blade. Get yourself a burnisher such as what chefs use, finely grooved, to restore your knife edge. You will find yourself using that more & your stones less, thus saving on knife buying. Roger Miller has one for sale on his website ROM with instructions on how to use it. The burnisher combined with ceramic sticks will give you a refined edge & reduce significantly the number of times you will have to aggressively remove steel from your blade.
