Sometimes the terminology of *what* exactly defining means can lead to trouble. In essence, what defining does is increase contrast between the areas of the reed, thus decreasing vibration in the reed.
What I see often is abrupt "digging" with visible bumps put into the cane.
I prefer to keep a blended reed throughout, but if I find I need to "define" any part of the reed to stabilize/control the tone, I just scrape around the area. For example, if I find I need to define the tip from the heart, I just scrape the sides of the tip. The act of scraping the tip thinner there will automatically make the area more defined in relation to the heart. This way, less resistance is put into the reed, but more vibration.
