The Shapton stones stay flat longer than other waterstones, and will stay flat even longer as you get finer in grit. What makes Shapton so unique is that they do offer 3 different kinds lapping plates in order to keep the stones flat to within 3-8 microns, depending on which plate is used. That's pretty flat! (if you would like specific product info, please email me personally)
I don't think it is harder to get an edge with the diamond stones. I think that the edge you get with the diamond stones is not enough. You could change your life by adding one or more stones after the 1200.
I have also fiddled with diamond stones and found that they didn't hold the edge well compared to a knife that used waterstones. I think it has something to do with the depth of the scratches made by the diamond stones. (I don't say that to try to get you to change, as you may know, I sharpen a lot of reed knives, and I am constantly tinkering!)
