I was in Vannes in France back in July (as part of the festival), and there were several Highland pipe and bombarde duos playing in the streets around the old town - the sounds were pretty much identical, both the chanter and bombarde playing in harmony.
Both the pipes and bombardes were in Bb - that's to say, they're named after the note produced when all six fingers are closed - to us brought up with orchestral instruments they'd be pitched in Ab.
Then there were some strange shawms which were like north African ones, but with a metal bell and several clarinet keys added (but still very crude) and took a bassoon-style reed.
When I tried to play one with a 'conventional' embouchure I couldn't get a basic scale to play in tune with itself - but with the 'blow in here and the sound comes out here' type of playing they command, they worked.
