I think that, above all, you need to pick a piece that you know you will be able to pull together and play well. Don't choose a piece only by its reputation as being hard, or being very notey. Some of these pieces (i.e. strauss) are really meant to be played after some long study, and understanding of phrasing. Many can learn the notes, some can learn the notes cleanly, few can do that and phrase at the same time.
Even the seemingly simple pieces can be difficult to phrase very well. You'd be surprised just how much you can pick apart a phrase.
