Addendum. I just re-read the thread and realized I missed your second post above. Sorry.

I would sharpen the knife flat on both the flat side and the beveled side; just re-create the angle that is already on the blade. You can then rotate the blade slightly as you use it to find the optimum angle to cut or scrape or whatever your chosen technique is.

You said the knife has little edge in the center. I'm guessing the blade bowed slightly in heat treat. Use a felt tip marking pen to blacken the entire flat face of the blade, then stroke it on the stone and see where the stone is working. If the blade is bowed you will need to keep grinding until the entire face is flat. If it's a big job you might start with 400 grit Wet-Or-Dry sandpaper (wet) on a flat sheet of glass or a marble counter to get the hard work done, then go to 600 grit and your coarse and fine sharpening stones. Do this with both ground faces...

The marking pen is a great way to check your progress...
