I've done "adult" piano twice -- with mixed success each time.
The first time was years ago as an undergrad, and the method book was by Bernard Wagness. I don't think that book is in print any more, but when I got a new piano this past year, I dragged the old method book out, and whipped through the first volume so quickly that I actually went online and found a used copy of the second volume on our favorite auction site, plus an accompanying volume or two of pieces for the "advancing" pianist. This is all classical. I have enjoyed playing it, and every time I try again, I get a little better!
The second time I actually took lessons, I was assigned the method books by Bastien. It's a newer format, and perhaps focuses a little more on technique than simply on learning how to play tunes.
I wonder if you could check the bookstore lists at area colleges/universities/conservatories, and see what they are using these days. Or, find out who the recommended piano teachers are in your area, and call a couple of them up to ask what method books they would use with a musically-well-versed adult who is a non-pianist.
