Dear Rachel,
I've never owned a Landwell or an Ando, but I recently bought a Graf for the first time. I'm really happy with it. If you can, try the feel of some knives in your hand before making a decision. The Graf is very weighty, which I like because I have the impression that I'm pressing less. The weight of the blade does a lot of the work (or at least it feels that way). For this reason, I've always preferred bevelled to DHG knives. However, we all have differing preferences, so by all means try to get a feel for a few knives before purchasing.
As for stones, I was thinking about posting a question myself, so please don't take my word for anything. The Shapton stones are really special, but I haven't invested in them yet, nor can I vouch for their performance over the long term.
Enjoy your shopping, and please allow me to advise that you buy the best and not skimp on this equipment. They say in Spanish, "lo barato siempre sale mas caro." The cheapie always ends up being more expensive (because you'll end up buying the better, costlier thing later on anyway). In addition, having the best equipment while you're studying will have a positive impact on your ability to learn more quickly and efficiently, and with a minimum of frustration. AND you will end up saving money on cane because you'll make fewer mistakes!
