I'm having the same trouble with my new students. I agree that starting with 'medium soft' or 'medium' if they have any chops (i.e. past clarinet/sax players) helps some. See if Susan's advice helps.
I always found warm, humid weather to have a 'flattening' effect on my reeds. This is one reason among many that I prefer more dense cane.
I don't know what to do about the weather, it doesn't seem to want to take advice, so I have to adjust the playing/reeds to accommodate
