I play in two sumer bands that give weekly concerts at lake shore locations. Breeze (or wind) is always a factor. We have sheets of Plexiglass cut to the size of the "desk" of the music stands. Additionally, we only take out the music we'll be playing. Folders stick out and catch the wind. I sometimes photocopy a page to avoid having to turn over the paper. It's easier to slide single sheets back and forth while tipping the plastic slightly toward you from the top. Another option I've seen is to use really long clips, like clothespins on steroids. I don't know where the players I saw got theirs. In my opinion clips are harder to maneuver in wind than the plastic. Also, it you don't have adequate light the camping head lamps work wonders (although the miners helmets that our sax players wear make a great statement!)
