I think they are still made to order by Selmer and maybe Buffet.
Beyond that, you need to turn to French websites:
http://www.foudebasson.com (literally "madman of bassoon", but it's a pun of sorts: a "fou de bassan" is the large seabird we know as a gannet).
http://www.bassons.com which may be more serious but isn't responding right now.
