For all the musical training we have, I often find that classical musicians can't do jazz or improvise. Perhaps it's a bit of the fear. I find those that learned classical music "by ear" actually improvise better and can adapt better to changes.
The only "composing" I've really ever done is realizing continuo parts. But in that case, I throw all music theory down the drain and randomly experiment by ear. As close to in period style as I am aware, but without explicitly thinking about the rules (because I don't know them or can't be bothered to learn, yet). Those chords and figures give me a headache.
