Hand shaping cane and the knife to do it

I'm attempting to hand shape some cane and bought a beveled knife to do it. What I would like to do (I think... other technique suggestions welcome) hold the folded cane and do an inwards shallow scraping motion. Now comes the knife, my first single bevel. It has a hollow on the flat side. Not sure if I'm sharpening it correctly. Do I need to establish the edge first? I've sharpened the flat side quite a bit but I still don't have much of an edge (very little in the centre, and that's probably of a result of needing to hone my stone). Should I sharpen that more to get a very defined edge? Then what about the other side? I'm assuming that a burr where I angle the knife is not what I want because I am shaping and not scraping (outwards). Do I need to sharpen the beveled side flush with the bevel? Sorry, stupid questions. I'm thinking I should've bought a straight edge instead, but if the bevel works I'd like to stick with that. I watched Robin's video did the flat side and then beveled side flush but my knife neither scrapes nor shapes well (still dull).
