Just a note about ceramic sticks; your knives need to be sharp for the ceramic hone to be effective-hopefully everyone using ceramic sticks knows that. Also, do not try to sharpen a dull knife with ceramic sticks, it will take you a millenium plus or minus a couple of weeks! As Bill D mentioned they help put a super fine edge on the knife and it is very easy to maintain the sharpness of the blade without having to get the oil out.
