I usually decide that the day of the performance.

With climate change our bodies fluctuate, and that can make it easier or harder to play on any given reed, even our so-called "performance" reeds. Our blood density/pressure adapts. This is opposed to what we usually describe as "the reed changes." - in reality reeds don't change a whole lot from day to day. Of course, the reed will tire gradually and react to saliva, but from one day to the next, no big changes *in the reed* occur. It's us.

Given that, it can sometimes be possible to play - and perform! - on reeds that, two days ago, may have seemed too hard ( too fresh) or too soft ( too old). So keep those old reeds around! As long as they aren't damaged, and you don't need the tubes for new reeds, old reeds can be a lifesaver for performance situations.

Having said that, I *do* usually keep the better reeds on the right side. ;) Is it different for lefties? haha...
