One of my favorite things is reading through Evelyn Rothwell's book of excerpts from Bach. All of the important stuff from the oboe, d'Amore and EH cantatas plus the passages from the b minor Mass, St. Matthew, etc. Lovely melodies, a sense of completion and fulfillment when the passage concludes. Satisfaction.
I also enjoy working on the orchestral challenges: La Scala di Seta, Sorcerer's Apprentice, La Valse... There's a very visceral satisfaction to nailing those sorts of licks at tempo, but speed comes slowly and not at all if one plays too fast.
And yes, the orchestral literature has tons of wonderfully melodic gems to polish. That's why we do this, I think...
