Ask Jende reed knife and Robert Hubbard for their best price on the hardest metal they have. Your final choice will probably be convenience more than anything.
=> Remark: I find the quality of my very old Pisoni beveled knife satisfactory... BUT I did mill it to make it hollow both on the "flat" and beveled sides for easier sharpening.
VERY IMPORTANT: the knife is only half of it. You also need excellent sharpening stones
=> knives and stones are THE ONE thing you must not skimp on. Poor quality will frustrate your learning experience something awful.
I highly recommend, for the stone, ceramic with a 1000 grit (or a little under) for re-edging and 4000 to 8000 grit for honing. It might also be easier (maybe cheaper) for you to get a pair of medium and extra-fine diamond stones.
