Mark -- Traditional Christmas caroles would always work. Consider the following:
Lo how a Rose
O Come, O Come Emmanuel
Oh Holy Night
What child is This
Once in Royal David's City
In Dulci Jubilo
All these and more would be fine unaccompanied, and would not be hard to transpose to a favorable key. Find out what caroles the music director is planning for the attendees to sing as well, and offer to play along with some of those.
If the service is a little more formal, and music other than caroles is appropriate, consider playing the passion chorale from the St. Matthew Passion, or a chorale from the Christmas Oratorio (Bach). However, in my experience Christmas eve services usually involve a series of caroles intermixed with scripture appropriate to the season.
