what's the little thing you can twist off the end of your flute for? why's it there? what does it do?

it should do nothing, it just makes it look better with a rounded end. *if you spin it off and look inside you will see a metal plate inside already that stops the sound*

By twisting it, you can adjust the location of the cork inside and affect the tuning of the flute. However, if the flute is properly adjusted to start with, this should not normally be necessary.
