If you have a six-holed fife, you should be able to play music for flute, and picollo, as well as fife on it, with no problems. The easiest keys would be D, G, and A major, though any key is possible when you get more advanced. A good site with a lot of traditional fife music is http://fifedrum.org. You should be able to find the link to the music somewhere. I also have my own site with more advanced music, and fingering charts, at ahttp://fifesonthegreen.com, if you're interested in that.
As for bagpipe, it sounds like you're talking about the traditional Highland bagpipe. These are all in the same key (concert B flat), and the music is usually written without a time signature. I'm not really sure of any sites with music (it's been a few years since I've played), but google should turn up some results.

The 7th hole is for an accidental, I'm not sure which one without knowing were on the fife it is exactly. Just keep it closed, and you'll be fine - the same music can be played either way.
