Many many pieces.
My favorite is the 2nd mvt. of the Concerto de Aranjuez by Joaquin Rodrigo.
Then you of course have the Swan of Tuonela by Sibelius.
Several composers have written concertos/sonatas for the English horn. You might want to check these out:
-Concerto for English Horn and String Orchestra - Vincent Persichetti (Persichetti rocks in general by the way)
-Concerto for English Horn and Orchestra - Ned Rorem
Sonata for English Horn and Piano - Paul Hindemith
Sonata for English Horn and Piano - Pierre Max Dubois

Ross Roy by Jacob de Haan is an AWESOME Eng Horn solo feature. Um..i think it's Chorale and Prelude: Be Thou my Vision by*the name escapes me*. That is also a Eng Horn feature. I just love Be Thou My Vision already, but the arrangement we played was beatuiful. Also Fiesta del Pacifico has a lil Eng Horn didy by Roger Nixon.

I know for a sure fact that the fourth movement of Pines of the Appian Way/Pines of Rome has a crazy english horn solo! If you have watched Fantasia 2000, the flying whales sequence is that song, not sure which movements it contains though. Have fun!
