There are so many......
i'll just quote a few for each.....
oboe - Heinz Holliger, Alex Klein .....
flute- Jean Pierre Rampal, James Galway...
clarinet - Benny Goodman, Richard Stolzman, Sabine Meyer..
bassoon - no idea
saxophone - too many.......just dont listen to kenny G
HE S*x!
Brass - basically i am not so sure....i know Arturo Sandoval, Claude Gordon for trumpet, and Dennis Wick (i think) for trombone......
Percussion - Evelyn Glenie etc....

Well as far as famous oboists go here in America, we have the old demigods like Marcel Tabuteau, John de Lancie, John Mack, Ralph Gomberg, Robert Bloom, Joseph Robinson, and Ray Still.
At present some of the most notable oboists here are Richard Woodhams, Peter Bowman, Elaine Douvas, Alex Klein, John Dlouhy, John Ferrillo, Joseph Turner, Marilyn Zupnik, and of course my personal favorite, Kathryn Greenbank.

Bassoon - Dag Jensen. I have a CD of him playing Mozart and Hummel's bassoon concertos, and some modern atonal stuff. He's awesome.
