The excerpts I've seen widely studied are:

Ravel - Tombeau De Couperin

Rossini - La Scala di Seta is HUGE!!! I can't believe either of you didn't mention it, it's a massive exceprt that is used all the time

Shostakovich - Symphony #1

Brahms - Violin Concerto

Beethoven - Symphony #3, #6

if you want, I can look at the excerpt list (I go to Laurier, and there's an excerpt list with the excerpts we have to learn each year) and I can post them on here. But the ones above are definitely biggies that you should take a look at.
