Oboes with a thumbplate are sold mainly in the UK - so I believe. There may be some that are difficult to change, but most should be quite easy to convert to the conservatoire system. I have seen an old Fox Renard oboe in the UK that had the thumbplate removed completely. Clearly, the owner preferred the conservatoire fingering.

I'm a newcomer to the oboe world, so I don't know exactly what is a gillet system.

A salesperson told me that to play a dual system oboe using the conservatoire fingering, you simply keep your thumb on the thumbplate all the time.

Actually removing a thumbplate should be very easy.
