I tend to agree w/ posts which advocate using a couple of knives. I use a beveled knife for roughing in the blank -- I don't even know who makes it (it's a very ugly knife w/ a yellow handle that I believe comes from Anne Hodges)! I also have had very nice luck with the Landwell's. I use their medium hard knife (but have not tried the soft or the hard). For years I used a Herder-style "Philadelphia-style" knife (or whatever it's called) -- basically a double-hollow ground razor on a handle. This is still the knife I turn to for a lot of tip work, but probably b/c it's easier for me to sharpen (softer steel?). I only switched to the Landwell's b/c I found I was going through the Herder's somewhat quickly. I have not had luck with Vitry knives.
Final recommendation: any kind of beveled knife for rough work, then have two hollowground knives going at the same time for the rest. Landwell if you can afford it (I do think they are nice knives), otherwise something in the $35 dollar range.
Good luck! The knife is BY FAR the most important (and the most limiting tool) for good reeds, IMHO.
