I use a Vandoren ligature with three interchangeable pressure plates. I have terrible trouble trying to change them as they're so tight to remove that I end up squeezing the ligature completely out of shape. Does anyone know of a knack to remove them? I tried yesterday as I wanted to experiment with the other two plates, but couldn't remove the one that's in.

I basically put one thumb at the top of the plate and the other at the bottom. Then I let the top of the plate pivot against the top thumb (my right) and press inward on the bottom of the plate with my other (left) thumb to rotate it off the screw. (I use my right thumb to press only because it's my dominant/stronger thumb - it should work the other way just as well.) I control the ligature with my two index fingers on the top edge with another finger or two (whatever feels comfortable under the bottom edge.
It takes a fair amount of pressure on the bottom of the plate to pop it off, but you shouldn't need to damage the ligature to do it. I guess if you put your fingers behind the ligature and press on the plate with both thumbs, you' probably crush the back inward.

We are talking about the Optimum?
I believe according to the instructions you turn the screw as if you were loosening the ligature SIMULTANEOUSLY as you tug on the plate. Do that in reverse to put plate on: turn the screw as if to tighten ligature WHILE you gently press on the plate.
I hope that helps.

Oh......
You know what, I think years ago someone on the Board asked about this and someone passed it along.
Makes a BIG difference!

Yes, mine came with instructions. The method Paul described is the one recommended.
