Far too many variables. Given your experience I'd buy a box of 3s and go up or down as necessary. I would say that most professionals play on a 3.5 or 4, whatever their reed brand or mouthpiece. Probably more 3.5 than anything else. There are always exceptions, of course. Variations in dental/muscular configuration and perception can make a setup that is too hard for one player too soft for the next, but I think the best-sounding cane is in the medium-ish strength reeds, and players adapt accordingly.
