Chant is by definition a single line, so there's no need for transposition.

The great collection of sacred (Catholic) chant is the Liber Usualis. It's a VERY large download at http://musicasacra.com/2007/07/17/liber-usualis-online/. The music is in 4-line clefs and written in neumes, but its easy to learn, and the neumes show how the line is phrased. See also http://www.globalchant.org/.

Another superb resource is the Choral Public Domain Library http://www3.cpdl.org/wiki/index.php/Chant, http://www3.cpdl.org/wiki/index.php/Category:Medieval_music.

http://en.wikipedia.org/wiki/Gregorian_chant has useful links

The Icking Archive has a substantial collection of chant http://icking-music-archive.org/ByComposer/GregorianChant.php.

For secular music, begin with http://en.wikipedia.org/wiki/Monophony. Google searches on the various types (e.g., troubators, trouveres, minnesangers) will find more than you need.

Few composers' names are known, but Hildegard of Bingen has become famous, and there are a number of downloadable transcriptions. https://www.google.com/search?q=Hildegard+of+Bingen&ie=utf-8&oe=utf-8&aq=t&rls=org.mozilla:en-GB:official&client=firefox-a#sclient=psy-ab&hl=en&newwindow=1&safe=off&client=firefox-a&hs=uJI&rls=org.mozilla:en-GB%3Aofficial&source=hp&q=hildegard+of+bingen+sheet+music+download&psj=1&oq=hildegard+of+bingen+sheet+music+download&aq=f&aqi=g-v1&aql=&gs_sm=e&gs_upl=23842l25008l0l25855l6l6l0l0l0l0l71l364l6l6l0&bav=on.2,or.r_gc.r_pw.,cf.osb&fp=1901f8742f56480d&biw=1652&bih=885

You might want to start with the famous Easter sequence Victimae Paschali Laudes, which I think is one of the most beautiful chants, and easy on 21st century ears. http://www.classicaland.com/free/gregorian_victime_paschali_laudes_las-huelgas.pdf
