If you ever visit Prague, don't miss the Museum of Music. It has a room full of ancient oboes, some with many keys and some without. I'm afraid I know very little about their history and construction. Plenty of fascinating experimental instruments, quarter tone pianos, vertical "giraffe" pianos, brass instruments and the usual haul of violins, viola di gamba and more.

The museum is a real gem, with dozens of automatic music players from the 19th and early 20th century, many of which are in working order. The staff are happy to wind them up for you. If you have a mechanical turn of mind, you'll love it!
