Another instrument you might want to check out is the tarogato/taragot/etc. It's basically a "wooden soprano sax" and sounds like a cross between a sax, clarinet and oboe. It's used mainly in Transylvania (Hungary and Romania) and is also really cool.

I'm not familiar with the cd you mentioned, but there are a lot of different Hungarian Gypsy cd's around...
