I actually use a C.W.Fobes classical mouthpiece (CF model I think). Very classical/Germanic/European in design. (They're in the sponsors section).
It provides a very 'focussed' (if that's how you spell it) sound that I seem to hear a lot when I listen to klezmer players. With a reed that's not excrutiatingly hard I can still do all the glissing etc that I want.
They're worth checking out.
