The problem with many folk tunes is that they rarely exist as ensemble score - usually there's the lead voice plus more or less improvised accompaniment.

How'bout some folk canons?

Then there are Satie's Gymnopédies/Gnossiennes that could easily be "blown up" to a quartet.
