just wondering...if it's called a "woodwind" quartet, then why are french horns included?

Usually it's quintet, and because, do you <i>really</i> want to hear a saxophone playing in a woodwind quartet/quintet?

The expanation I heard is that the sound of a french horn blends nicely with woodwinds. The french horn seems "softer" or quieter compared to say, a trumpet or trombone.
The french horn is so versatile, I knew someone who played it in both a woodwind and brass group. Hope he brought the right music to each rehearsel <g>.
