 OK...don't chop my head off here...I know how to transpose, but it just does not sound the same when I transpose something that was written for a C instrument...any ideas?

 Well, I just go from a key to a key...C - B flat for example.  Isn't that what I am supposed to do?

 If you're playing music in concert C (major, minor, whatever), you will need to transpose to D (up, not down a whole step).  You had the right idea, but you just went the wrong way. 
 
And in reality, you transpose DOWN a 7th, but thinking of going up a step then down an octave is easier for me.

 Although if the actual pitch doesn't matte (ie whichever octave) then don't worry about the down the octave bit.
