I play a couple of different woodwinds already, but for groups that only take brass instruments, what would be a good instrument to double on? Trombone, or cornet?

Well, brass groups need both of those instruments, so either one would be good.
I have a feeling that it's easier to find cornets and trumpet players, so if you doubled on trombone, you might have an easier time getting gigs.

Well, I decided on baritone horn. My wife and I will start taking classes in a "New Horizons" band on the 5th. So, we'll be playing together! She's got one and I've got one.

Ah, the New Year, and romance is in the air! It will be nice playing the same instrument with wifey.
Baritone horn is probably the easiest brass instrument to pick up. Its range and tone are like a trombone but since it's easier to manipulate, you'll get all the sweet solos!
It uses the same fingerings as trumpet, so you could laterally transfer to that if you wanted to. Hope you have fun!
