Um. Actually you're wrong. An oboe trio alone, as did Beethoven: perhaps.
But as for major parts in bigger works, he did.
As Chris states, Brandenburg Concerto 1 has 3 oboe parts in it. In one section, it is just the three oboes playing as a duet. It's a very famous section.
As Chris was pointing out, perhaps the trio she is suggesting is the excerpt of the Brandenburg Concerto 1, appropriately marked in the part as "trio".
