Very sorry to hear about the fire - heartbreaking. You're dead right to take your time over choosing your new instruments. One piece of advice - take a lot of time up front trying a variety of oboes, and really concentrate on this as your first step. You'll spend the majority of your time playing the oboe so don't muddy your choice by trying obs and cors and d'amours all at once.
By the way, I'm a UK-based oboist as well. Also love the shop of delights in Chiltern St but have no experience of buying instruments from them as I have always gone direct to France for my obs and cors.
