Is a dust-free room important for the plating process? It didn't seem as if the plating room was separate from the rest of the shop. Maybe they didn't emphasize it, or I just missed the isolation of the plating area. Or maybe a clean room isn't necessary? How fast does the plate harden?

Electroplating of any kind doesn't need to harden as it's metal and not paint. It's instantaneous and the thickness of the plating depends on the current and the time it's in the plating tanks for.

The plating department is most likely in a different area of the factory due to the toxic chemicals involved and dust isn't an issue as the keys are washed and degreased before plating to ensure excellent adhesion.
The keys are agitated while in the plating tanks and any dust or dirt that gets that far will either sink to the bottom of the tanks or float on the surface.
