When writing music by hand, how long should the stems be?

One octave long. Look at the example at the top of this page of a middle C. You will see the stem extends as far as the C above this.

Yes, the answer above is "correct" but in the scheme of things it doesn't really matter. If it looks right to you, its probably fine.

Eoin is correct. However you do not always apply this rule when more notes' stems are linked together.
