Hey there,
I just inherited an older leblanc eb that's in pretty decent condition. I think it's at least 50 years old but don't know much about it. It has two eb mouthpieces in the case- Both Vandoren, a 2RV and a 3. As I understand it, the 2RV is the same as the 5RV but I don't know much about those or the Vandoren 3.
I'm not sure which I want to play on as I'm just putting my eb chops together. Anyone have any info about these that might help me decide?

Try them and see if one works for you. Right now it is probably just about getting some chops and comfort on the instrument. After a little while you will be able to determine what your needs are.

I'm going to try them both but if anyone has any info on the differences in design, I'd love that info. Also anyone's preferences or suggestions. Lots of really experienced people on this board, you know?

Well, depending on funds, (a) figure out the bore diameter at the barrel and/or top joint (old instruments can really surprise you), and (b) find a good mouthpiece person, tell them the numbers, and ask them what would work well. Mine's Ed Pillinger; yours could be whoever you trust or people recommend. Knowledge always trumps supposition, and there's nearly always something out there that sounds and plays better than what you've considered so far.

If you are looking for new mouthpieces, the Hite plays well and is pretty inexpensive. There are lots of hand finished ones out there to choose. I like the Fobes. I have heard good things about those by Behn, Smith and Grabner as well.

Ed hit it with the 4 names. Very much worth the price. I use the Fobes and Grabner. Behn and Smith are also wonderful pieces.

I'd have to 2nd or 3rd the recommendation for Walter Grabner's Eb mouthpiece. I couldn't believe the difference it made!
