I was just wondering how common or uncommon it is for players who weren't child prodigies to occupy first chairs in good symphony orchestras.

Well there are quite a few child prodigies who don't occupy first chairs.
I suspect many if not most first chairs were not "child prodigies" but enormously gifted players who put in a very large amount of hard work in their student days.

The new 1st clarinet of the City Of Birmingam SO didn't even take up the clarinet until he was about 15, he started first on violin.
