What section do people generally play for concerto competitions when they are limited by the "one movement" rule or a time limit like 8 or 10 minutes?
Same question for the Copland as well.

Copland is typically all the way through, but one could theoretically do the cadenza through the end.
For an audition (say, for a MM program), the Nielsen is usually stopped after the first cadenza, and then skipped to the second cadenza. However in a concerto competition, it would be difficult to justify doing a single section of the Nielsen separated from the whole work (due to the continuing nature of the piece).
Since you are asking about such difficult repertoire, you could consider a single movement of the Corigliano or Francaix concerto. Both work well in single movement fashion.
