What changes typically changes with tone and response as a new barrel becomes broken in?
I was told not too pick something that in too free blowing and "fills the room" as it will lose its hold and become harsher as it breaks it. Do you find this to be true?

No.....typically the bore narrows over the first months. This can be either dramatic or miniscule. I am talking thousands of an inch. It depends on the wood, with mpingo (what you call grenadilla) blackwood being the least variable.
Also, the bore might become ovoid....that is why it is good to rotate the axis to find the sweet spot.
Later-- years later-- it expands a bit. (blow out??)
The above is highly simplified.
Disclaimer, I make and sell custom barrels from a small home workshop

Just like breaking in a new clarinet. You choose what plays best for you at the time you buy it and hope it either does not change enough to notice or changes for the better. There's no way of knowing what going to happen in a month, a year or more. Every piece of wood in every environment will act differently. ESP
